Do you really need Camel? Are you needing to do any "routing" or anything? Or, are you just looking to create a REST web service? If you don't need Camel, CXF is pretty simple to use for just building JAX-RS web services by itself. A lot of folks get caught up in trying to use Camel for *everything* when it's really not necessary.
