I have personally worked with Tomcat + Cocoon and with IIS + Tomcat. Both combinations work so combining all three is likely to work as well. I guess the performance will not be that different, if I where you I would start by asking myself:
* How many visitors will I have on my site? * How many page views will I get? * What should be the maximum waiting time?
After that: look into performance related articles.
