Lenya does come with a default sample publication.
I haven't installed the latest Daisy yet (shame on me) but knowing the good people who are behind it I'm sure it'll be a nice experience.
Anyway, I'd suggest that you evaluate both of them - "CMS" means so many things today that you really have to evaluate the thing yourself for a serious project. Don't stop at the list of features, but have a look under the hood and/or test them on *your* use cases. From what I know of Lenya and Daisy (and hippo) they are very different in their way of doing things, so you'll have to find out what suits you best.
At the GT2004 there was a joint presentation of the both the hippo CMS and Daisy, you might want to bug Steven and Arje to put their presentations online if you haven't seen them yet.
Some GT2004 presentations are online under "material from events" at http://cocoon.apache.org/mirror.cgi, but not all speakers have uploaded their stuff yet (although I have asked - http://marc.theaimsgroup.com/?l=xml-cocoon-dev&m=109975915802991&w=2)
