IIUC this indicates that the pipeline system does not know what mime-type to use for the zip serializer.
Are you using the zip serializer config from the main sitemap, or your own? Do the zip samples work?
The serializer declaration should be like
<map:serializer logger="sitemap.serializer.zip" mime-type="application/zip" name="zip" src="org.apache.cocoon.serialization.ZipArchiveSerializer"/>
