Sorry if I'm way off base here, but are you sure this isn't a simple matter of 
the response being correct, but the console you're using to review the raw 
response is not set to the correct encoding? For example, in Eclipse, you must 
also set the Console encoding to UFT-8 by going to Run -> Run Configations -> 
Common tab.

In other words, the response may very well be correct, but the console is 
displaying it wrong.
