This is definitely something we'd like to do.
Sorry Owen, I couldn't get back to you sooner. 
I'm still in the process of updating the Apache DS installers (and there are 
many of them) for the 2.0 release.
Once, this is done, I'd be happy to help you improving the plugin (especially 
the configuration) and adding support for the next ApacheDS 2.0 version.
I would be awesome if we could have the maven plugin working with 2.0 at the 
time of the release. :)
