This has nothing to do with the Tools>AutoCorrect options.
Since 95% of today's spreadsheet users try to misuse spreadsheets as a database for text data, all constant text values within the same column are offered as a category list analogue to a combo box in a database form.

This can be turned off for the entire Calc component in Tools>CellContents>AutoInput

List validation provides a more controllable feature where you define a list of values which is supposed to be valid for a defined range of cells. Data>Validity... Type: "List" or "Cell Range".
