You can write directly to S3 over Hop's [AWS S3 VFS](https://hop.apache.org//manual/latest/vfs/aws-s3-vfs.html) implementation, just use the `s3://<bucket>/file_path` syntax. We don't add any additional encryption. There isn't a minimal Apache Hop distribution, but you can delete plugins you don't need by just deleting folders from the `hop/plugins` folder in your installation.
