You stopped seeing what messages? The actual requests? Or some output from your post handling script? Assuming the requests (I've read it three times: now I think I get it...); - do the requests still work (do you still get the data in the server)? - are you sure your forms still use POST (nobody changed them to GET, by any chance?) - any funny CustomLog directives added? Apache usually logs everything, all the time.
