Here is the log when I added the next virtual host and it stopped
showing virtual hosts just the default host. As you can see I tried
several times.

What does the error log say?
In general, the answer in the FAQ is right regardless of the number.
Either increase your system's available file descriptors, or decrease
the descriptors used by apache.
