3Gb for a process seems a _little_ excessive!

I suggest that you run
1) PHP in FCGI mod with a fixed number of processes (for example NCPU + 1), and with PHP_FCGI_MAX_REQUESTS=10000 and,
2) Apache with mpm_worker instead of mpm_prefork
