I know there is a pane in pavucontrol that allows the user to set the
default audio device for play.  There is also a pane for the
microphone.  If you set the microphone as default (fallback), it should
always be the first choice.  I only have one device, so it is
automatically the default.

Is it possible that the program you are running is configured
internally to use a different microphone and it is over-riding the
default?
