If you have wireguard running, then just use gnome remote desktop.

my mum's internet connection uses DS-Lite (IPv4 tunneled in an IPv6 connection)
don't know if I get wireguard running / get my plan archived ...
You will need a mostly static and reachable IP address on one end.
Maybe look into something like tailscale VPN.
There's also rustdesk. If you have a reachable IP address or a VPS,
then you could run it completely privately as well.
