How do you backup the device to a connected usb 1-2tb drive... I've

I'm interested to be able to completely "restore" everything if I need

I don't know what it uses, but if you're using btrfs, there are various
utilities that use the snapshotting function to make full or incremental
backups. Due to the subvolume function, the incremental backups can be
restored as full backups.
