I have my files organized in XDG-compliant ways, under $HOME, with quite a few of my 
programs having data and state files under ~/.local ~/.cache etc... and I prefer not to 
have a web of symlinks in $HOME to some "mountpoint". The file-tree being 
separate from my user directory was one of the major inconveniences I faced in windows... 
My programs and way of use...

You don't need symlinks. You can mount the subvolume directly into your user directory.
