Hi, There are not many differences. Sunstone is perhaps more up to date regarding the OpenNebula API though. Nevertheless there are both have different features and you should choose the one that fits you best.
Regarding Sunstone documentation, you can check [1]. We think it is a very good idea to include a VNC client in Sunstone, and so I have opened a ticket [2] to put it in practice (thanks!).
