        I use postgresql, the database is UTF8. What is the reason
        this is happening?

I am unable to reproduce this using t...@test.com as the envelope FROM address and my|@domain.tld as the TO address. I need a reproducer, snippet of the SMTP transaction and a dump of your policies to investigate further.
