If I understand you right, you don't want to link to a page, but include an image.
This does the trick:
<p><img src="http://www.project-33.com.au/img/logo.png"; alt="" /></p>

But this will not embed the image in your mail, and most likely the mail program of the recipient will only load it when ordered to show remote content.

PS: I am using my personal email ([email protected]
<mailto:[email protected]>) because my hosting company needed to
re-direct stuff (or something) and i cant receive emails for 48 hours on
my business account.
