Personnally, I use WFS-T like that :

   var saveStrategy = new OpenLayers.Strategy.Save({
       callback: function() {
           alert('feature saved');
       }
   });

   wfs2  = new OpenLayers.Layer.Vector( 'lumin', {
       strategies: [
            new OpenLayers.Strategy.BBOX(), 
            saveStrategy

        protocol: new OpenLayers.Protocol.WFS({
