Thank you Bart, I got it sorted. Just to follow up for anyone else with a similar problem: You can set the example up locally without using a proxy. E.g put in local references to the localhost geoserver layers you want to serve up in your map BUT you must remove the line OpenLayers.ProxyHost = "proxy.cgi?url="; Otherwise, you need to setup the proxy, edit the line accordingly and then you can reference remotely hosted layer instances. I hope this helps someone else...
