Mapfish client = GeoExt + Openlayers GeoExt = ExtJS + Openlayers I use Mapfish just as client! It has very nice widgets that would safe you a couple of hours coding.. The result is the same you would obtain coding with GeoExt because both use ExtJS (BTW, now http://www.sencha.com/blog/2010/06/14/ext-js-jqtouch-raphael-sencha/ Sencha ).
