I think the behaviour is slightly different depending on whether you copy a cell or explicitly select and copy its contents. But in either case, my experience is that if you use Edit | Paste Special... (or Ctrl+Shift+V) instead of ordinary Paste and then select "Unformatted text" in the Paste Special dialogue, there will be no paragraph break inserted (and the text will inherit the formatting of the surrounding text). The exception to this is if you have line breaks in the spreadsheet text: these will become intercalated paragraph breaks in the text document.
