Hi Eric,
 Generally this is an issue of missing fonts rather than a missing feature of 
OpenOffice.org. If you are using a recent version of OpenOffice.org e.g. 
1.1.4 then try "File" -> "Autopilot" -> "Install Font" and select a Kanji 
font. 

If this does not work then you could also email the Japanese OpenOffice.org 
community at http://ja.openoffice.org -> Mailing list.
