For quite a while, I couldn't figure out how do do anything with them. But, after reading this list for a few weeks and seeing people solve similar, but usually more complicated problems, I figured it out.
I edited the email so just the data table was left. Then, I opened OOo Calc and found (just waiting for me!) insert->External Data->HTML table.
It worked like a charm!
Once the data was in a spreadsheet, I could reformat it any way I wanted to.
Problem solved. If I had not been reading this list, I probably would not have thought of this approach.
