In writer position your cursor where you want the formula then choose Insert->Object->Formula. The math editor window will open and you can start typing away. I believe calc works the same way, but I haven't tried it.

As an added bonus if you do a lot of technical papers and want numbered equations try typing fn then hit the F3 key -- you'll automagically get a numbered equation to fill in.
