Firstly, be sure that you have a full licence copy of MS Office and not
a time limited trial packaged included with Vista. If you did not buy a
licence as part of Dell's promo package, or you have not purchased one
separately, you probably have the trial edition and you will have to buy
a licence when the time runs out, or switch to  OpenOffice.org.

You uninstall  OpenOffice.org the same way as you do any other program.
Go to the "Start -> Control Panel -> Programs and Features" menu option.

During the install process you ticked/checked all the boxes to
"Associate" the Microsoft Office file types with the OpenOffice.org
equivalent programs. This "File Association" will not be reversed by
uninstalling OpenOffice.org. Although the following link refers to
Windows XP, the procedure does work with Vista:
