I'm not on a Mac, so I can't really address the specifics here, but the only thing that should have changed was the file associations. That shouldn't have meant "anonymous" icons, though, just the ones that belong to the OOo equivalents of the MS Office programs. Email programs often have their own controls for the associations, though, and it sounds as if those are the ones you're concerned with. What is your email client? How did you try to change the email settings? Were you able to browse to the executable OOo files? If you save the attachments somewhere else, can you open them either by double-clicking them, or by opening an appropriate application (word or Writer, for example) and specifying them?

As for uninstalling, you would do that the same way as you would any other program that doesn't have a specific uninstall option. The only issue I can think of is that if Quickstarter is active, you have to exit it first. But the two office suites can both be operational on the same computer, they don't interfere with each other.
