/opt/openoffice.org1.9.104/program/soffice is the file you want. Double click it to run OOo 2.0 beta for the first time. You will be asked if you want to use the same settings as 1.1.4 (or you should be asked this question) and possibly some other information. While it is doing this, it also creates a workstation subdirectory (.openoffice1.9.104) in your home directory.
