I am not certain I understand. Help > Contents > Index > languages
provides many details on how to do this. One thing that often gets
missed is that one should make styles for the various languages one
works in to save time. Other than that the only extras you need are
dictionaries etc. for the languages you need.

You might like to review the manuals and HOW-TOs at
http://documentation.openoffice.org/ for hints and tips to make using
OOo even easier. For example, the special character how-to so you can
simply enter accented characters from the keyboard.
