I had a similar problem trying to send a fax a couple of months ago. When I inspected Tools > Options > OpenOffice.org Writer > Basic Fonts, I found that the Default font had been set to Symbol through interaction with the printer/fax driver.
I selected the font(s) that I wanted to use - Times New Roman as I recall - and the problem hasn't returned. I don't know what the setting had been before that event. That was on a Win98 machine, btw. I don't recall having a similar problem while using Linux.
