That is easily handled. In fact there is a method described in 
http://documentation.openoffice.org/setup_guide2/2.x/en/SETUP_GUIDE.pdf
that let's you the user put everything but the UI in whatever location
you want. The UI/menus may also be re-located but I have not tried that.

also covers some tools that you can use, other than alien, that offer
some freedom to the user such as the install and uninstall scripts,
rpm2tgz et cetera.
