If you are referring to the box in the template that says "NOTICE OF CHANGE OF ADDRESS OF PLAINTIFF'S COUNSEL", that is called the footer. You should be able to place the cursor in that area, delete what is there, and type in your own text.

After you have changed the text, if you wish to save the file as a new template, go to File > Templates > Save.
