Currently there is no common symbol catalog. The symbol catalog is specific to Math. In text documents you may use "Insert/Special character" dialog. But the most natural way to do this in Writer would be to type the whole formula (or single user-defined character e.g. %chi), select the formula text and typing the menu short-cuts for "Insert/Object/Formula". Other workarounds that can be thought of are to get the character via the "Insert/Special character" dialog and than make use of it either via the auto-correction (by providing some text e.g. xxchi and have it corrected) or assign an auto-text to that character. But in both cases you have to do it twice. Once for Math and once for the Writer application. You may also file request for enhancement for sth. like that to be implemented. Actually I think we may have a similar one. But searching for it will take me too much time right now.
