1. Turn off the Quickstarter. This gadget often prevents new option
settings from "sticking". I think it holds some file open so that
changes don't get written to disk. If it's running, Quickstarter will
show up as an icon in your System Tray (assuming you are using Windows,
don't know about *nix, Mac, ...). Right click it and choose "Exit". The
icon is blue/grey and has flying birds on it, the kind drawn by kids.
2. Install the English dictionary if you haven't already done so.
3. Go to Tools>Options>Language Settings>Languages and select "English
(UK)" as the "Default language for documents". Ensure the language name
has a little tick and an "abc" prefixed superscript. If not, the UK
English dictionary is not correctly installed. Make sure "For current
document only" is *not* checked (ticked).
4. Go to Tools>Options>Language Settings>Writing Aids and, in the
"Options" section make sure "Check in all languages" is *not* checked.
5. Shut down OpenOffice and restart it.
Now only UK English will be used even though other dictionaries are
installed.
