I'm using OO 2.2.1 on a Mac OS X system to write a technical article
containing some equations and math symbols. To insert individual
symbols in the text I have to click on 'Insert' in the menu, then
'Special Character', then the character I need, then 'Open'. At this
point the character is inserted as requested, but the character table
disappears, so to insert another symbol elsewhere I have to go thru the
whole clicking rigamarole all over again.
Is there a way to get the chosen symbol table to stay open, cutting out
a lot of the extra repetitive steps?

It is a pain, I agree.
Try this:
Tools|Customize|Keyboard
Shortcut keys: Shift+F10 (or some other key that is open and you like)
Category: Insert
Function: Special Character
Click the "Modify" button
Now whenever you do Shift+F10 you will get the Special Characters table.
After you've inserted one SC, Shift+F10 will open back up to the same
Font and Subset that you'd selected previously.
This is weird. I just found this message from NoOp. I've been getting
them a couple of days after I should.
Anyway, thanks for this suggestion, NoOp. I like it even better than
your other one, because it lets me use the keyboard rather than making
me use the mouse.
