How can I find out if I have or have not added check-marks before the three Microsoft file types when ask at installation "Select the file types that OpenOffice will automatically open"?

From Control Panel help:

Go to Tools> Folder Options

To change the program <mk:@MSITStore:C:%5CWINNT%5CHelp%5Cfolderop.chm::/HELP=glossary.hlp%20TOPIC=gls_application> that opens a file, on the *File Types* tab, click *Change*.

Just ignore the "<mk:@MSITStore:C:%5CWINNT%5CHelp%5Cfolderop.chm::/HELP=glossary.hlp%20TOPIC=gls_application>" That was added when I pasted the text from help.
