Just as in so many situations, Paste Special is your friend! Copy the cell or cells and then paste back into the same cells. But instead of using the normal paste, use Edit | Paste Special... (or right-click | Paste Special... or just Ctrl+Shift+V). In the Paste Special dialogue, remove the tick from "Paste all" if necessary and then make sure that Numbers is ticked but Formulas is *not* ticked. This freezes the results of your calculations, rather than keeping the recipe for calculating them - which is what you need.
