See the Mac porting pages of OpenOffice.org on how to install on a Mac:
http://porting.openoffice.org/mac/
Unless you have Leopard (OS X 10.5.x) on your Mini, you'll have to install
the windowing program (nothing to do with Windows :-))
Read the How-To about X11.
