That is because the column format is a property of the page style, and you probably have all your document set to the same page style. So yes: all of your document will inherit this change.

Okay, <F11>, click the "Page Styles" icon. Right-click on "Default" (or any other style already listed, I imagine), and click on "New". In /Organizer\, enter a new name, e.g. "_my_2col", hit <TAB>, and "_my_2col" is entered as the default value of "Next Style"; sounds good to me. [...] Select one or two (but not all) pages of text, and double-click "_my_2col". Ta-da! Now *ALL* pages are two-column, not just the selected ones.

You have applied this page style to the required pages, but - since the Next Style is set to be the same, this automatically sets the next page (and the next, ...) to the same style. So you see the same result as above.

In order to achieve what you want using page styles, you will either have to set the Next Style of your two-column style to Default (or whatever), so that the following page goes back to that style, or else insert a manual page break and use the facility in that dialogue to change the page style back to your single-column page style at the break.

But there is an easier solution than all this - and it is more flexible than using page styles, since it allows changes to be made elsewhere than at page breaks. Go to Insert | Section... and create a new section at appropriate points in your document. In the Insert Section dialogue, you will find a Columns tab, where you can set your requirements. You can insert as many sections as you need and change column structure as much as required through your document.
