All three links go down on load, which causes NFS to fail.

Can you check in the switch port configuration if there is some kind of
Ethernet flow control enabled?
Can you try to modify the behavior by changing the settings of your host
interfaces, e.g.

ethtool -A em1 autoneg off rx off tx off

or
ethtool -A em1 autoneg on rx on tx on
?
