I found this thread from last year that indicates it should be possible
to use ceph rbd for the self-hosted engine:

In my new hosted-engine deployment, the hosted-engine --deploy menu only
shows me options for:
Please specify the storage you would like to use (glusterfs,
iscsi, fc, nfs)[nfs]:
Should I also see options for using ceph rbd, or do I need to start with
nfs, and migrate the self-hosted engine to rbd after the initial setup
is complete?
