I think it depends how you connect Outlook to SOGo (Openchange, EAS, or just IMAP). Don't know about Openchange, but with the other options I think you'll have to add these things manually for each user. see documentation page 15 "SOGoCalendarDefaultRoles" and "SOGoContactsDefaultRoles" for default calendar/addressbook permissions and page 22 "KindFieldName" and "MultiBookingsFieldName" for resources. > 3.
