In SOGo V2 Webinterface go to "Preferences" -> "Mail-Options" and change option "When replying to a message" to "Start my reply above the quote". In SOGo V3+4 Webinterface open Preferences (= cog wheel) then select "Mail" on the left side. Set option "When replying to a message" to "Start my reply above the quote". In Thunderbird you have to set that on every account in its settings under compose & address.
