Those logs look ok.
You only have an LDAP ERROR:
ERROR(-[NGLdapSearchResultEnumerator nextObject]): does not support result references yet ..

I have not seen that before.

Could you enable LDAP debugging with LDAPDebugEnabled = YES; and repeat your test?

What I did was:
Share folder Administratie and gave full rights to the selected user.
Clicked save.
refreshed the webmail page and it's gone.

I've been looking for the dovecot.log but it seems it's logging into the
zentyal log. I cannot find anything related to the folder share in that log.

I just upgraded my test system to 4.2.0 release of SOGo.
There I can not reproduce your behaviour.

The only problem I have seen was with valid users who had never logged
into SOGo, when giving sharing permissions.
But that was on calendars, not email.

Do you see any error messages in sogo.log?
Do you see any error messages on dovecot side?

I assume you meant the permissions that you see on the attached image?

Those have been set and saved. But it's not persistent.
When you refresh (after saving) the added user is already gone.

You have to give the user permissions, adding a user doesn't do that on
its own.
After adding the user to the permission list, double click on the users
entry in the list.
Then set the desired permissions and "Save".
