There are many howtos on the net on achieving this.

The SA documentation will point out the difference between calling 
spamassassin and spamc/spamd (hint, spamassassin loads perl etc every time, 
spamc/spamd work as a client/server pair where the server is loaded once).

You have two choices on implementing SA with postfix - both of which have been 
documented in the archives of this list within the past week.  Postfix 
content filter, or procmail/maildrop call.
