I don't know which (open source) one is the best, but you may try your luck with:
1. MAT (http://www.eclipse.org/mat/), which analyzes heap dumps. Just dump the server memory while the server is running and later open dump files with MAT.
2. VisualVM can monitor your server memory usage, measure surviving generations, and compare memory snapshots -- so you could detect what is causing memory leak.
