Maybe it only happens on some days because the log-rotator only bothers to rotate the log when it exceeds a certain size. In that case, it checks every day at 02:00 but only tries to bounce Tomcat if the log is a certain size. Since the application doesn't shut-down cleanly, "bouncing" Tomcat fails .
