Asensio I think that there are a lot of think to take into consideration before choosing your production platform. For example, what type of document are you serving (ratio static/dynamic). What is the usage pattern. Available bandwith. SLA. Concurrent connections. And so on..
If you want professional support from Tomcat and Linux, I suggest you also have a look at JBoss / RedHat offering. They will help you configuring/optimizing/tuning your environment. We already use their support, which I highly recommend. I hope this will help in yoiur decision.
