If the -Djava.awt.headless=true trick doesn't work, you can always use
"xvfb", the X virtual frame buffer. In order to run xvfb, you'll need to
have a base X system installed.

Most package managers probably have an "xvfb" package that you can install.

And you might like to try SimpleCaptcha which I recently found to be more user friendly and easier to configure.

Our users were unable to correctly read the JCaptcha image text in 20-30% of attempts.
