Problem solved - my bad! After some detailed debugging it looks like the new model object had not yet been persisted properly so the query to retrieve its values had returned no results meaning that the model list was left empty...
So once again - an issue with how I wired up the underlying model persistence and not an issue with the best Java UI framework in the world!
